Salsify pesto with almonds and garden herbs

6 to 8 people

  • 1 bunch of salsify

For the garden herb pesto

  • 6 tbsp olive oil
  • 4 sprigs of thyme
  • 3 sprigs of sage
  • 2 sprigs of rosemary
  • 3 cloves of garlic
  • 100g almonds
  • 80g shaved parmesan
  • Salt and pepper

Preparation:

  1. Wash, peel, and cut the salsify into chunks, then soak them in lemon water to keep them white.
  2. Blanch the salsify for about ¼ to have them "al dente".
  3. Make the pesto by stripping the herbs, combining all the ingredients, blending, and adjusting the seasoning if necessary.
  4. Sauté the salsify with a bit of butter, and just before serving, pour the pesto over them, mix well, and serve.
  5. The salsify can be served as a side dish for a roast, grilled dishes, or enjoyed as a standalone dish.
