Salsify pesto with almonds and garden herbs

- 1 bunch of salsify
For the garden herb pesto
- 6 tbsp olive oil
- 4 sprigs of thyme
- 3 sprigs of sage
- 2 sprigs of rosemary
- 3 cloves of garlic
- 100g almonds
- 80g shaved parmesan
- Salt and pepper
Preparation:
- Wash, peel, and cut the salsify into chunks, then soak them in lemon water to keep them white.
- Blanch the salsify for about ¼ to have them "al dente".
- Make the pesto by stripping the herbs, combining all the ingredients, blending, and adjusting the seasoning if necessary.
- Sauté the salsify with a bit of butter, and just before serving, pour the pesto over them, mix well, and serve.
- The salsify can be served as a side dish for a roast, grilled dishes, or enjoyed as a standalone dish.
