The story began in Edinburgh in 1801 when Miller Crabbie became the father of a young boy, John Crabbie. Born into a thriving family grocery and liquor business in one of Edinburgh's poorest and most industrialized areas, John Crabbie later founded John Crabbie & Co and capitalized on the nearby port of Leith, giving it access to ingredients from around the world.

In the 19th century, John Crabbie traveled to the Far East to source only the finest ginger; the same ginger that is used today in this alcoholic ginger beer. It was while sourcing these ingredients during his travels that John met his first elephant and immediately fell in love with these noble beasts, hence the elephant emblem that still remains on all packaging today. .
